It was in the queen's apartments, in the antechamber known as the Grand Couvé, that Louis XIV's public meals took place, whose sumptuous ritual attracted all the courtesans.
Only the royal family could sit at the table. In front of her, the princesses and duchesses who had the privilege of sitting on the stool, then, standing, the people who, by their rank or with the authorization of the bailiffs, had been able to enter.
The butler, his silver-headed staff in his hand, warned the captain of the guards who immediately announced to the king that he was served. The same ceremony was repeated every evening: the sovereign then came to dine in public in the antechamber of the Grand Couvert.
The show was impressive, the ritual sumptuous, and this bad language of Saint-Simon did not hesitate to tell the multiple anecdotes linked to this ritual and to this play, which was one of the strategic places of the court in Versailles.
Les Sinfonies for the King's Suppers by Michel-Richard de Lalande accompanied these evenings in Versailles. Here they are taken up by Hervé Niquet with an original bias, typical of this chef known for his fantasy.
